Mild Sweet Miso & Pickles on Rice crackers

Some days, I crave something light, quick, and a little bit fancy – the kind of snack you can put together in minutes, but still impress guests (or just yourself).
That’s when I reach for mild sweet miso and a few crunchy pickles.
I love using mild sweet miso as a dip or spread. On a rice cracker, just spread a little mild sweet miso and top it with some pickles – you’ll have a quick, good-looking, and delicious appetiser in no time. (Well… it’s also my quick & easy snack!)
Even your vegan friends can enjoy it!
Mild sweet miso has a gentle sweetness from fermentation, and its light saltiness is the perfect match for crunchy crackers and tangy pickles. The day I took this photo, I didn’t have any red-coloured pickles in stock ( I finished on that morning!!), but if you have some with a nice vivid colour, they’ll make this snack/appetiser look even prettier.
You will need:
- Rice crackers (less flavoured one is better)
- Mils sweet miso (or your preferred type of miso )
- Pickles (colourful ones make it looks extra pretty)
How to prepare:
1. Spread a thin layer of mild sweet miso on each rice cracker
2. Top with pickles (or anything really)
3. Arrange on a plate and serve immediately
Tip:
Try using pickled radish, Umeboshi, Takuan or other brightly coloured pickles for a beautiful pop of colour, if you are serving for your guest.
Depending on your salt preference, you can experiment with different types of miso. Have fun creating your own combinations!
