Organic brown rice miso is the most popular miso in Cooking with Koji range.
This is the special version, fermented for 3 years (Pre-pandemic miso!!)
It is slowly fermented more than 3 year in natural environment, it has complexed, deep flavours and full of umami. When you open the jar, you can enjoy the joy of the rich aroma.
Grandma always said, use 3 years miso.
You can use this miso exactly same way as other my regular miso.
If you feel this flavour is too strong, you can use less.
This miso is great for spreading on the toast (nice with avocado and/or eggs), of course making miso soup, add to your stir fry, mix with cooked potato, boiled carrot, making dipping sauce, dressing.....how to use is up to you! Unlimited way to use.

Specification:
The miso is in glass jar - which we will recycle when customers bring back to us.
This is unpasteurised miso, a living miso, still keep fermenting. It means, the colour of the miso will be changed, flavour of miso will be changed gradually, so you can enjoy these flavour change.
Keep this product in the fridge to slowdown fermentation.
If you don't use for a while, place cooking sheet on the surface of miso to avoid from oxidation.
